
Beak
Beak is an independent craft brewery founded by Daniel Tapper in Lewes, East Sussex, producing hop-forward IPAs, pilsners and imperial stouts since summer 2020.
The brewery started life as a nomadic project, with Tapper spending years working on recipes alongside friends at breweries across the UK. After establishing a permanent base just outside Lewes in 2020, Beak settled into a style it describes as "life-affirming ales". The beer is produced unfiltered and seasonally inspired. Styles span pale ales, IPAs, pilsners and imperial stouts.
Production takes place in three concrete fermenters sourced from Italy, each holding 2,000 litres, and the brewery uses London Fog yeast.
Beak also operates a taproom and street-food canteen in Lewes, which opened in August 2020. The taproom runs 15 keg lines devoted to brewery-fresh beer, giving drinkers direct access to what Beak is currently producing.
