Carl Jung is an alcohol-free wine specialist based in Rüdesheim am Rhein, in the Rheingau region of Germany, whose founder, Dr. Carl Jung, patented the vacuum extraction process for dealcoholisation in 1907.

Dr. Carl Jung was a wine merchant and son of a winemaking family from the Rheingau. Working at his family winery at Boosenburg Castle in Rüdesheim am Rhein, he developed a process for removing alcohol from wine and had it patented in 1907. The method, known as vacuum extraction, removes alcohol at temperatures below 30 degrees Celsius, preserving the wine's original character. Alongside this, the process incorporates aroma recovery: a stage designed to retain the natural wine aromas that would otherwise be lost during dealcoholisation.

Carl Jung is credited as the inventor of dealcoholised wine and has been producing alcohol-free wines at Boosenburg Castle for over 100 years. The company is regarded as one of the pioneers of the alcohol-free wine industry.

The range spans still red and white wines alongside sparkling wines, all made from wines selected for their suitability for dealcoholisation. Some sparkling wines in the range originate from Spain, whilst the company itself remains based in the Rheingau. Every wine is dealcoholised to an alcohol content of less than 0.5% and produced without animal products, with Bentonit used in the clarifying process. Several sparkling wines in the range are noted as suitable for pregnant guests.
